Half Baked Harvest Recipes

Hi!! As the weather warms up in New Orleans, ice cream has never sounded better. I have recently discovered the “Tillamook” brand of ice cream, which if you haven’t tried it yet, let me tell you, it is AMAZING. Along with discovering the Tillamook brand, my mother and I have discovered, and taken a keen interest in “Half Baked Harvest” recipes.
This week, I tried their Blueberry swirl coffee cake muffins and their cookie dough ice cream bites. The blueberry swirl coffee cake muffins were interesting because they contained both fresh blueberries and blueberry jam. I felt like the cinnamon flavor from the strudel was overpowering, but I didn’t mind because I love cinnamon!

For the cookie dough ice cream bites, they were somewhat difficult to make, because the cookie dough and ice cream were difficult to cut after being in the freezer overnight. Also, it was difficult to get an even layer of chocolate, while trying to hurry so the ice cream wouldn’t melt. Overall, they didn’t turn out the most beautiful, but they were tasty! The cookie dough was mainly made with almond flour, and cashew butter, which was interesting because I am not overly familiar with cashew butter, but it was excellent!

Although, if I am being honest, tomorrow for dessert I might just have some plain cookies and cream Tillamook ice cream because truly, nothing can beat it.

This summer, I plan to attempt to make my ice cream recipes, inspired by Tillamook! Hopefully, it will help get me through the hot summer days here in New Orleans, and 32-hour weeks of gymnastics.
