A Summer to Remember, Thanks to Molly Kimball and Chef Ryan!

As many of you know, over the summer I had the fantastic opportunity to work with Molly Kimball and Chef Ryan at Ochsner. Together, we completed and perfected 5 recipes that will be a part of the Eat Fit menu. The recipes included aioli, chicken salad, sanoma chicken salad, tuna salad, and egg salad. Along with these recipes, I also got the opportunity to make 3 keto brownie recipes. These brownies were part of a WGNO segment featuring Molly Kimball, where she explained their internal science.

Have you ever wanted a healthy, keto brownie, but you don't want to make them from scratch?  There are now 3 box mix brownies to create the perfect keto brownie. 

Swerve Brownie Mix:

Low carb, gluten-free, and made with no artificial sweeteners or colors. The ingredients in this mix are very streamlined. These brownies have the perfect deep moist chocolate flavor. They are also not too sweet, with a very balanced chocolate flavor. 

Birch Benders Ultimate Fudge Brownie Mix:

Low carb, gluten-free, and made with no artificial sweeteners or colors. If you are looking for a super sweet brownie, then this one will be the one for you! This mix has erythritol, stevia, and monkfruit, which can lead to a slight bitterness and aftertaste. Despite this, these brownies will still be a favorite of mine in the kitchen!

Duncan Hines Keto Friendly Chewy Fudge Brownie Mix:

Low carb, gluten-free, and made with no artificial sweeteners or colors. I’m sure many of you recognize this brand from your traditional cakes, brownies, cupcakes, muffins, etc. Let me tell you, they have done it again! These brownies are fudgy, a little less dense, cakelike, and have an incredible chocolate flavor! In my opinion, this will be the one I grab off the shelf the next time I crave a delicious healthy brownie!

With school starting back up, I unfortunately had to say goodbye to Molly Kimball, and Chef Ryan. I just wanted to say a huge thank you to both of them for an incredible summer full of education and opportunity.  I am so grateful for the trust and confidence they had in me to be a part of their work.  Exploring and understanding the strategies the pros use in a commercial kitchen will enhance my techniques in my home kitchen.  I look forward to continuing my journey with you all next summer if not maybe over winter break!
